#NationalWatermelonDay at #CiaratogaLiving: The #DelMar Diet

In honor of National Watermelon Day, what better way to celebrate than getting a little creative with my Real Horsewife skills in the kitchen…and bar?

I’m officially naming this meal the “Del Mar Diet” on the CioncéWorkoutPlan.

  • It’s easy.
  • It’s healthy.
  • It’s colorful.
  • Beyoncé and Horse Inspired.
  • It’s got alcohol.

In fact, The Del Mar Diet is quite similar to a day at the races at Del Mar:

  • Very visually appealing.
  • Very little food actually consumed.
  • Very strong cocktails.
  • …still come out winning.

Watermelon Salad Bowl

  • Watermelon
  • Basil Leaves and Romaine Lettuce
  • Feta Cheese
  • Blueberries
  • Dressing (optional)

…Yes. I’m so glad that I used the end of the watermelon to make a bowl. Pinterest would be proud. I scooped out all of the watermelon and layered the bottom of the bowl with a few slices of romaine lettuce. Then, I added in the remainder of the ingredients. Yup, That’s it! When I was on the East Coast visiting last month my Godmother made a watermelon salad that contained dressing and black olives which was also ‘delish, should you choose to substitute.

I put the extra watermelon to use and made a cocktail to go along with the salad…Obviously. I’m sure you wouldn’t expect any less. Considering I just prepared a bowl of basically nothing that tastes fantastic… the cocktail was no exception.

The I’ve Been Drankin {Watermelon}

  • Fresh Watermelon Chunks, Muddled
  • Whiskey Ice Cubes
  • 1.5 oz Organic Vodka
  • Pink Lemonade
  • Basil Garnish

This was a good life choice. Incredibly refreshing and perfect for summer sipping, yet easy enough to make an entire pitcher for a party. My favorite part of the drink has to be that Crate and Barrel horse cocktail glass, perfection!

I devoured the salad then went in on the cocktail. Let’s just say I was ready for a Cioncé dance party to “Drunk in Love” within 30 minutes. I felt that cocktail super quick, which makes me think…maybe a diet of ALL Watermelon is not the best way to go? Next time around I would add a protein to the salad, such as Shrimp, to keep it light but also provide more substance to keep your energy level high on those summer race days. Also, the cocktail can easily become a mocktail by removing the vodka and adding club soda. Yum!
