The last thing I wanted to do after my workout last night was cook…but I missed all the Saratoga happy hour food specials..so cooking it was.

Per usual, my strategy for cooking is:
– Whatever is in the fridge/cabinet that is unexpired and edible.
– Has to be in my belly within 25 minutes of cooking…

So I ended up with this: Stove top baked chicken with sautéed mushrooms, onions and tomatoes in a bed of broccoli.

I really wanted to bake the chicken in the oven but #aintnobodygottimeforthat. To make the chicken taste baked I decided to add water and lemon juice to the skillet. No idea. Thought it may work. I already had olive oil, garlic and onions simmering in the skillet so I threw the seasoned chicken in there and gave it a go.

Success. Looked in the fridge halfway through… found some tomatoes and mushrooms…threw those in there.. steamed up the broccoli..
